Texas Sheet Cake with White Chocolate Icing


Although I try my best to lead a healthy lifestyle, I have a few setbacks...duh, who doesn't?

Mine are:

1.  Eating too many sweets.
2.  Spending too much time on the computer.
3.  Laying out when it gets sunny.

The first two are inevitable with this blog, but the last one I have no excuses for.

In high school, I tanned in tanning beds for prom and it's honestly really hard not to anymore.  Not just because I like to get a tan, but because in the winter time I just need a little "sunlight". 

Nowadays, though, I sick solely to the good ol' outdoors.  I can assure you that I was outside the very first day it was sunny and above 60 degrees and loved every minute of it!  It just feels so good.  Sometimes I listen to music, but most of the time I just relax and enjoy the time to myself.

Today, I indulged in all 3 guilty pleasures and I don't feel guilty at all.

Texas Sheet Cake (Cupcakes)
All Recipes

Ingredients:

Cake:
  • 2 cups all-purpose flour
  • 2 cups white sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup sour cream
  • 2 eggs
  • 1 cup butter
  • 1 cup water
  • 5 tablespoons unsweetened cocoa powder
 Icing:
  • 6 tablespoons milk
  • 1/2 cup butter
  • 1 teaspoon vanilla extract
  • 4 cups confectioners' sugar
  • 1/2 cup melted white chocolate
  • 1/4 cup sprinkles (optional)

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10x15 inch pan.
  2. Combine the flour, sugar, baking soda and salt. Beat in the sour cream and eggs. Set aside. Melt the butter on low in a saucepan, add the water and 5 tablespoons cocoa. Bring mixture to a boil then remove from heat. Allow to cool slightly, then stir cocoa mixture into the dry ingredients, mixing until blended.
  3. Pour batter into prepared pan. Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center comes out clean.
  4. For the icing: In a large saucepan, combine the milk,  vanilla and 1/2 cup butter. Bring to a boil, then remove from heat. Stir in the melted white chocolate and stir.  Add the confectioners' sugar slowly, mixing until blended. Spread frosting over warm cake and add sprinkles.

    I never did get into tanning thankfully! My hubby goes every week and I nag him about it...every week haha.

  2. healthy setbacks...hmmmm...(trying to pretend to have to think hard to find one but really have so many can't choose...)
    My biggest setbacks are anything chocolate/hazelnut flavored and my new ipad.

  5. Mouth. Watering. It's great to just indulge every once in a while. My healthy lifestyle setbacks? My eating habits have just gotten wacky with college. I'm always so busy so some days I don't get a chance to eat lunch. I'm probably under-eating to be honest. I can definitely tell that it's taking a toll on me. Welcome to college haha.

    My setback...sweets for sure but I'm doing better on that one. :)

    I love to lay out for about 15 minutes after going swimming in the summer, but I don't see that as something that's not good for me. Being in the sun is wonderful and makes me feel great! I'm hardly waiting until it warms up and the pool is open! :)

  9. Considering some of the things I've had absolutely no guilt about doing, I'd be genuinely frightened to think of what a "guilty pleasure" would be, Katie. lol... That said, your cake is beautiful. And there's something about the white chocolate icing in particular that's positively mesmerizing in the most wonderful of ways.

  12. My setbacks are your first two, and eating out of boredome. I'm very rarely actually hungrey, just bored. So I eat. But it's boring to eat healthy things, so I eat sweets. But it's all in the name of fun, right?

  14. Nothing wrong with enjoying something good, made with good ingredients, and so delicious! So there is no "guilty pleasure" to me, only small pleasures of life.

  17. I almost broke down and went tanning this winter and I'm sooo against it normally, it was just an especially gloomy winter this year. Sooo glad Springs here :)
    And my vices? Wine. Wine. and Wine. Oh and reality tv. Like a LOT of reality tv.
